Everett is about to get a little more “hole-some.”
Hillmann’s Bagels, named after owner Katherine Hillmann, is set to open next year at 2718 Colby Ave., according to the Everett Post.
Hillmann is no stranger to baking as she also runs the popular South Fork Baking Co. on Everett Waterfront.
The new shop will focus on bagels, offering six to eight varieties with a range of cream cheese flavors. It will also serve classic breakfast and lunch bagel sandwiches, aiming to capture the feel of an East Coast bagel shop with hand-shaped, kettle-boiled and freshly baked bagels.
Hillmann told the outlet while the official hours are still being finalized, the shop will be open on weekends until 10 p.m., serving “rippers,” a New Jersey deep-fried hot dog staple, with a can of beer.
Both Hillmann’s Bagels and South Fork Baking Co. prioritize a first-come, first-served approach to ensure all products stay fresh and to reduce waste at the end of the night.
An official opening date is still “TBD”, according to the shop’s Instagram page. Check the page for updates.
