Founders of The Pastry Project Are Cooking Up a New Bakery

Emily Kim and Heather Hodge will serve classics and inventive pastries in their new walk-up bakery.

Emily Kim and Heather Hodge, the founders of The Pastry Project, are set to open a bakery this fall in Seattle’s Pioneer Square neighborhood.

The new bakery will operate in the same spot at 165 S. Main St., according to the Seattle Met. 

“After 5 years of being a pastry education space and a summer soft serve window, we’ve finally decided to open our little dream walk-up bakery!” the team shared via Instagram. 

After six months of carefully curating their menu, they are ready to serve beloved classics like cinnamon rolls and chocolate chip cookies, alongside inventive pastries such as the maple pancake croissant, crème brûlée croissant and a seasonal upside-down fruitcake topped with whipped cream and toffee sauce.

The bakery will also offer sweet and savory brunch options, including a homemade granola yogurt bowl with passion fruit curd and local honey, bran bread with whipped butter, olive and feta focaccia and a ham-and-cheese croissant.

The new addition is set to open in mid-October and will welcome visitors Thursday through Saturday, from 9 a.m. to 1 p.m. For the latest updates, visit The Pastry Project’s website and follow them on Instagram and Facebook.

What is The Pastry Project?

The Pastry Project was founded in 2019 by Emily Kim and Heather Hodge, who first connected at Molly Moon’s Ice Cream—Hodge as head chef and Kim as director of social impact, according to the website.

The program provides 20 weeks of free training in baking and pastry skills, along with soft skills development and job placement support. Graduates are connected with Seattle-area nonprofits and more than 30 local bakeries, dessert shops and grocery stores to help launch their careers.

“Our focus is to have fun and do good, and for our community to join us in this work! We’ve created products like our pastry kit subscription and chef-instructed classes so that bakers all over the country can join us in our mission to break barriers and bake with purpose,” the shop’s website reads. 

Now, the duo is cooking up something new with the launch of their bakery.
