French-Inspired Bar Bayonne Opening in Seattle

The new concept from the owners of L'Oursin will bring French fare and biodynamic wine to Bar Bayonne this summer.

A new wine bar and cafe will be coming soon from L’Oursin owners Zac Overman and J.J. Proville. Named Bar Bayonne, the restaurant will open at 1315 E Jefferson St. later this year.

An official grand opening date has not yet been determined, however, it is likely to be open by early summer or fall at the latest. The business does not yet have a website made or social media channels created, as the process is in the early stages of development. The business license for Bar Bayonne, LLC was filed this February.

Like its sister restaurant, Bar Bayonne will focus on its eye-catching ambiance, colorful decor, and upbeat atmosphere.

According to the Seattle Met, “Bar Bayonne will be an all-day spot, offering coffee and takeaway baguette sandwiches by day and a wine bar–esque menu at night. Like L’Oursin, it will take plenty of cues from France, but it will also borrow from northern Spain.”

Customers are to order at the bar, rather than the traditional sit-down service, to foster a casual setting in the cafe. The menu is expected to serve charcuterie, oysters, small shared plates, and appetizers as well as an extensive biodynamic wine list, featuring both local and international spirits.

What Now Seattle reached out to Overman for comment but did not immediately hear back.
