Ghostfish Brewing Company, Seattle’s gluten-free craft beer pioneer, is buying the former Pike Brewing Company to boost production and meet growing demand.
The new location sits about 2.5 miles south of Ghostfish Brewing’s existing taproom and restaurant in Seattle’s Georgetown neighborhood.
Co-founder Brian Thiel told What Now Philadelphia the team will continue brewing at the existing flagship location, though on a smaller scale.
“With the absence of the bulk of our production equipment being moved to our new brewery in Georgetown, we will be able to expand the size and scope of our taproom and restaurant over the next 6-12 months. We plan to double the size of our dedicated gluten free kitchen which will allow us to expand our menu offerings,” Thiel said.
Thiel added in a statement the move has been a long time coming and will fuel growth both in production and at the existing Georgetown taproom.
“We started a process of identifying and viewing potential vacant warehouses around the greater Seattle area with the intention to build out a new state-of-the-art brewery back in early 2024. After learning about the former Pike brewery opportunity from our friends at Fremont Brewing in late 2024, we were pleasantly surprised to discover that it checked most of the boxes we were planning to create on our own. The timing of acquiring the new production brewery aligns perfectly for us to meet the growing demand for Ghostfish beer,” Thiel said.
GBC expects the new production brewery to boost capacity to six to seven times its current output.
“We’ve been oversold the past 3-4 years. The new production brewery provides us with the opportunity to achieve sales that we unfortunately haven’t been able to obtain out of our current production brewery. More importantly, we’ll be in a better position to expand our distribution footprint and finally get Ghostfish beer into the hands of more customers throughout North America who have been requesting it over the past ten years,” Thiel said.
The brewery is the largest producer of gluten-free beer in the U.S., distributing to 21 states while aiming to deliver top-quality beer and an exceptional customer experience.
