Luna Mexican Grill Will Open Sometime Soon in Everett

According to a recent permit filing, a new restaurant called Luna Mexican Grill will open in Everett, located at 6600 Evergreen Way.

A representative of Luna Mexican Grill was not immediately available for commentary upon What Now Seattle’s request.

While an official opening date and what Luna’s will offer have yet to be confirmed, Luna Mexican Grill is filed under Olguin III, LLC according to the permit filing.

According to Bizapedia, Olguin III LLC was filed on April 29th of 2022. The registered agent on file, Jeanette Olguin, is also a permit filer for Luna Mexican Grill.

Loop Net states that the property that will be home to Luna Mexican Grill is approximately 6,000 square feet, with a lot size of 0.29.

When it comes to a Mexican grill, one can describe it as a culinary tradition that brings the sizzle of smoky grilling and the zest of Mexican seasonings to the forefront. Classic favorites like carne asada (grilled beef), pollo asado (grilled chicken), and al pastor (marinated pork) likely take center stage. The meats are marinated in a symphony of flavors that typically include ingredients like citrus, chilies, garlic, and aromatic spices.

When doing more research on the property, Bhu-Ping Thai Cuisine, now listed as permanently closed, was a prior resident. According to Bhu-Ping’s website, they stated “We would like to take this opportunity to welcome you to your home to great-tasting Thai dishes. We serve only the freshest and finest ingredients.”
