Falafel Fresh, the Middle Eastern–inspired eatery, plans a third location in either Bellevue or Redmond.
“We’re trying to expand. We opened our Seattle location last April and we’ve been successful with the second location [Kirkland] as well. Now, we’re trying to get into one of those markets for a third location,” owner Gary Abuel-Rub told What Now Seattle.
The restaurant operates the Seattle outpost at 105 Yesler Way in Pioneer Square and the Kirkland location at 117 Lake St.
Falafel Fresh prides itself on scratch-made dishes, including falafel crafted from chickpeas, parsley, onions, cumin and a blend of spices.
“We make small quantities every day to keep it fresh and keep it really consumed daily instead of making big quantities,” Abuel-Rub said. “Any meat or rice, it’s made on the stop. We do not pre-cook and pre-heat it. We do it all in an open fire and in front of the customers.”
Other standout dishes include lamb shank, chicken kebab and a chicken shawarma sandwich. The house combo features chicken kebab, lamb and beef kefta with yellow Basmati rice, homemade hummus and a salad with tahini and garlic sauce. Vegetable and vegan options are also available.
“We get our spices from Jordan to make it authentic. We don’t like to buy it from here locally; it’s never close to the original, authentic ones. The taste is very to the Middle East,” he said.
No location has been finalized yet, but Abuel-Rub is eager to share the Mediterranean fare with more diners.
“It means a lot. We are on the right track. We’re serving good healthy food to the public,” he said.
