New Concept From Saint Bread Owner Coming to Wallingford

An experienced restaurateur with a portfolio of popular concepts is working on a new venture.

The Wayland Mill is planned for 3800 Latona Avenue in Wallingford, Seattle Met reports.

The food is expected to be a twist on American cuisine, implementing “Japanese ingredients and Japanese sensibilities,” according to the news outlet. Coffee, breakfast and pastries will be available in the morning, as well as lunch (counter service) and dinner (table service). Expect both indoor and outdoor seating.

Owner Yasuaki Saito is behind several other popular Seattle concepts: the bakery and café Saint Bread, pizzeria Post Alley Pizza, and a new Italian-American restaurant called Tivoli. Saito was also an owner of The London Plane, which is now closed.

The new restaurant will be located along Lake Union, at a new development called Northlake Commons that touts itself as “Seattle’s first and only mass timber commercial office building​.”
