New Mexican Kitchen Called Colibri’s Coming To Squire Park

A new Mexican restaurant on the northeast side of the city may be arriving soon.

A new Mexican kitchen seems to be coming to the Squire Park area.

The business called Colibri’s Mexican Kitchen recently applied for space on June 5 at 1429 12th Avenue, Suite B. The listed applicant is Ricardo Castaneda-Garcia. Also at this address is Osteria la Spiga Italian restaurant.

Other restaurants in the Squire Park area include Bai Tong Thai Street Cafe, Katsu Burger, Dave’s Hot Chicken, Mt. Joy, Skillet Diner @ Capitol Hill, and Koko’s Restaurant and Tequila Bar. Also inside the building is PopRox Dance Capitol Hill.

This does not appear to be part of a chain, and the only other businesses to be called Colibri are in San Francisco and Orlando. The menu has not yet been released.

The hours of operation are not known, but it applied for a “rest lounge” location, so later hours can be expected. More will be known later in the application process.
