According to a recent permit filing, Nomadic Wine Dispensary aims to debut in Capitol Hill at 700 Broadway East.
“We are in the final stages of finishing the restaurant and hope to open in the next few weeks. We’ll probably open quietly for the first few weeks to work out the kinks and then we’ll have a more official launch date once we feel ready,” Co-Owner and Managing Partner Tim Sale told What Now Seattle.
“We both share a passion for travel and exploration, and the food and drink you consume on your adventures is a huge part of the experience. We love discovering new wines that we’d never heard of before and bringing that experience to others.”
“We also think that wine can be intimidating and sometimes pretentious. Even those of us who have a decent knowledge of wine can feel embarrassed when we mispronounce a wine name or feel judged when we say something about wine that might not be “in vogue”. In a typical restaurant, this can lead to sticking with the wine you always drink.”
“Our 80 self-dispensing taps at the wine dispensary remove this by allowing anyone to pour a taster of anything that sounds interesting with limited financial commitment and without going through a gatekeeper (ie, server). It also encourages people to roam and chat amongst themselves about what they are tasting, positive or negative, and discover new favorites.”
“A key feature is the self-pour system with 80 taps, offering a vast selection of local and international wines and beers. Get a card when you walk in and roam through the options at your own pace. Each tap includes a little information about the wine to help you make a selection. In addition to wine and beer, we will offer craft cocktails, mocktails, and 9 rotating craft beer taps.”
“For lunch, we’ll be serving a selection of cured meats and veggie Tuscan sandwiches on our homemade Schiacciata bread along with a couple hearty salads. After lunch, we’ll have a selection of international tapas (boquerones, roasted cauliflower with yogurt tahini, spicy n’duja clams, etc), charcuterie platters, flatbreads and rich desserts like English sticky toffee pudding and Basque cheesecake. The kitchen can accommodate dietary preferences with gluten-free and vegan-friendly options.”
“The previous restaurant was a little cold and quite large. We’ve brought in new furniture and tables to try and make more intimate and loungey spaces. We think we’ve created a place where you’ll want to spend several hours catching up with a good friend. The size and location of the space make it perfect for parties, company events, and winemaker get-togethers. Be on the lookout for a host of event types to choose from.”
