Plantiful Superfoods Getting Third Location In Capitol Hill

Vegan restaurant, Plantiful Superfoods, is expanding into Capitol Hill located at 1204 E Columbia St., confirmed by Co-Owner Jessie Nguyen.

Plantiful’s mission is “to make healthy food accessible to everyone, everywhere,” as seen on their website. This expansion puts them closer to doing just that. Nguyen described their vegan food as “healthy” with their air frying method for their hot items – no grilling, no deep frying. The restaurant serves smoothies with no processed sugars and only natural ingredients.

Two other locations are in Kirkland Urban and South Lake Union making Capitol Hill its third where they “will be expanding their menu a bit with breakfast and”will be offering breakfast items and grab and go options as well”.”

They’re not stopping there, however. “We are looking to hopefully expand to another three locations by the end of this year as well,” Nguyen said breaking the news to What Now Seattle.

Leasing information on file tells us the space will be 1875 square feet located on the first floor of the Rianna Apartments complex. The lease begins in May 2023.

Nguyen made no comment on expectations for opening timeframes for Capitol Hill or the potential locations to come.
