A new winery production called Elentone in Woodinville will soon open at 18570 142nd Ave NE in Woodinville, according to the owner Chris Sherry.
“We are very excited about this new venture,” Sherry told What Now Seattle, “We hope to be able to open in June, but no confirmed date for opening as of yet.”
Elentone, a producer of exceptional sparkling wines, combines the rich traditions of European sparkling wine houses with the bold and creative essence of Washington State wines. This unique approach allows wine enthusiasts to experience the complexity and elegance of the Traditional Method, renowned for its association with Champagne but crafted with Washington-grown grapes.
At the heart of Elentone’s production is the renowned Traditional or Champagne Method, celebrated for its meticulous process and ability to deliver wines of the highest caliber. The journey begins with primary fermentation, where a base wine is created. This is followed by the addition of yeast and sugar, initiating a secondary fermentation within the bottle. This critical step generates the delicate bubbles that characterize sparkling wine, owing to the high pressure maintained inside the bottle. The wine is then aged, with premium quality wines undergoing a minimum of 36 months of yeast-induced aging to develop desired aromas and flavors, according to the company website.
