Popular Tacoma Eatery Expands with New Lacey Location

Cooper's Food and Drink, known for comfort food and creative bites, is expanding its lively atmosphere to Marlin Road.

Tacoma’s popular family-style restaurant, Cooper’s Food and Drink, is expanding to Lacey. 

Owners Greg and Tanya Troger will bring their welcoming atmosphere to 2400 Marlin Rd. NE, Suite A.

“Cooper’s Food and Drink is a locally owned restaurant and bar dedicated to providing a superb dining experience with excellent service. We proudly serve regionally sourced ingredients and beverages,” the restaurant’s website reads.

Cooper’s serves up a mix of comfort classics and creative bites. Starters range from crispy wings and house-made taquitos to fried pickles, sliders and a giant Bavarian pretzel with dipping sauces. Soups and salads include a rich lobster bisque, Caesar, cobb and taco salads.

Sandwiches and burgers feature the savory Cooper’s Dip roast beef, fried chicken, Cuban, Fishwich, Italian sub and a classic grilled cheese. Flatbreads and pizzas showcase inventive toppings like brussels sprouts with bacon, chimichurri chicken and BBQ chicken. Entrees include mac and cheese, house-made bolognese, Marfredo pasta, pub steak, and fish and chips.

The cocktail menu blends house specials with classic favorites. Signature drinks include Cooper’s Mai Tai with lilikoi foam, the smoky Casa de Cooper with mezcal and tequila, and the Cascadia Sazerac with rye and applejack. Old fashioned variations come in black walnut, tequila, brown sugar and grapefruit. Lighter options feature berry and peach bellinis, a French 75, Aviation and Basil Gimlet, while tropical choices include the Cooper Colada and Hemingway Special.

While it’s unclear whether the Lacey location will mirror the original outpost’s hours, the Tacoma location is open Monday through Wednesday from 11 a.m. to 10 p.m., Thursday from 11 a.m. to 11 p.m., Friday from 11 a.m. to midnight, Saturday from 9 a.m. to midnight, and Sunday from 9 a.m. to 10 p.m.

Though an exact opening date has not been announced, Mr. Troger said on Facebook, “Nearing the end of a long road of construction at Cooper’s Food and Drink in Lacey, we are looking forward to our debut and recognizing the amazing dedication of the Cooper’s team!”
