Ramen Man located at 1616 N 45th St will soon be replaced by a Japanese takeout only concept from Owner Yuta Sugimoto.
Sugimoto decided to officially close the doors to Ramen Man during the pandemic, but now has decided to reopen and change the location to a Japanese takeout-only restaurant. “I’m still working on the design and name. Nothing is fixed just yet,” he told What Now Seattle in an interview on Wednesday. We do know that this new concept will be different from his other two.
Issian Japanese Stone Grill and Kokkaku are Sugimoto’s other restaurants operated under Safari USA, which he is President of as well. Issian is family-friendly with shared plates and they cook the meal right in front of you on the grill. Kokkaku is a “Japanese inspired Meat House,” according to its website, “where whole beast butchery is the focus and local sourcing of farmed, foraged, and artisan craftsmanship is at the forefront of interpretation and creativity.”
Renovations for Ramen Man’s replacement are expected to cost $100,000 according to the permit on file with the city for the 700 square foot space. Sugimoto plans to open his new takout-only spot by May or June 2023.
