A new spirits lounge, Ruby, is set to open its doors at 135 NW 85th St #4 in the Greenwood area, confirmed by Mike Jochum, the owner.
“Ruby aims to create an atmosphere that combines the charm of a dark Victorian setting with contemporary elements. The interior will feature artwork from local artists, including the notable talent Sullivan Giles. The objective is to offer patrons a space where they can enjoy exquisite cocktails without breaking the bank,” Jochum told What Now Seattle, “Hopefully, we will be able to open Ruby in mid-July.”
Unlike traditional bars, Ruby will focus primarily on cocktails, complemented by a selection of beverages on tap and in bottles and cans. With four taps and six options for bottles and cans, the lounge will also offer a modest wine list. Jochum emphasizes that Ruby will be a small bar and will be managed by a single person, who will not only serve as the bartender but also handle the cooking. The unique layout places the kitchen directly behind the bar, allowing customers to witness the preparation of their meals. For food, Ruby will be offering frozen pizza from Ridge Pizza right down the road in Phinney Ridge, hand pies and sausage rolls from Australian Pie Company in Burien, and assorted air fryer-friendly bar/grill finger food (tots, mozzarella sticks, mini corn dogs, etc).
