Salt Harvest Restaurant To Go in New Populus Hotel

A restaurant with a sustainable theme will soon be open at Populus Seattle.

The foundations are being set for the new Salt Harvest restaurant at the upcoming Populus Hotel.

Urban Villages, the real estate title and development company opening the hotel at 100 S King Street, recently announced Salt Harvest is opening in late May. It’s described as a “distinct, sustainability-forward culinary destination.” Along with this, there will be the Finn rooftop bar debuting.

According to an article from FSR Magazine, Populus will be a “carbon-positive hotel,” located in Pioneer Square. Going along with this theme, Salt Harvest with be hearth-driven in its cuisine. A menu hasn’t been disclosed, but there will be an emphasis on seafood, meats and produce for the dishes.

“A deeply Pacific Northwest dining experience shaped by fire and seasonality,” says their Instagram page.

The restaurant’s main Chef Conny Andersson and Chef de Cuisine Jonathan De Paz are introducing the space. Anderson is from Aparium Hotel Group which is working with Urban Village to open the space. He has also worked as the Culinary Director of Discovery Land Company.
