Shibshib Has Filed For the Former Home of Eastern Cafe

Shibshib filed for a liquor license on August 27th.

According to a recent permit filing, Shibshib has filed for a downtown Seattle location at 510 Maynard Avenue S.

A representative of Shibshib was not immediately available to comment upon What Now Seattle’s request.

While an official opening date and what Shibshib plans to offer have yet to be confirmed, according to the permit filing, Shibshib has filed for a spirits, beer, and wine rest lounge permission amongst two other permit permissions.

According to Washington Company Search, Shibshib was filed under Aswad LLC, which was incorporated on June 11th, 2021. Ahmed Suliman is listed on the LLC and permit filing. Washington Company Search states that Ahmed is also behind Pyramids Express LLC.

Google states that the address listed on Shibshib’s permit filing was once home to Eastern Cafe, but Google marks Eastern Cafe as permanently closed. The cafe is described as a “Mellow, high-ceilinged hangout with lots of seating offering coffee, crepes & a popular happy hour.” A change of use permit was filed for the address on April 1st, 2024.
