Building on its growing popularity, a Japanese restaurant is adding two new locations this year.
Sugo Handroll Bar, led by Norman Wu and Danny Brawer, will debut Alderwood Handroll Bar + Lounge in spring 2026 and Woodinville Handroll Bar in fall 2026, according to the website.
This will be the third Sugo Handroll Bar. The flagship on Western Avenue near Pike Place Market is billed as Seattle’s first handroll bar.
The bar specializes in open-style and temaki hand rolls made with seafood sourced from the Pacific Northwest and Tokyo, along with Koshihikari rice and crispy nori. The menu features classics such as crispy shrimp and king salmon, as well as signature rolls like bluefin Otoro and soft-shell crab. Small bites, including edamame, chicken tasty taage and calamari Furai, round out the lineup.
Sugo offers an intimate, omakase-style experience, with Chef Han Lee leading the program and bringing nearly a decade of sushi experience.
“We believe in sourcing our sustainable seafood responsibly so we work closely with local fishmongers who share our commitment to ocean health, ensuring that every bite supports healthy ecosystems and vibrant fisheries,” the website reads.
Wu and Brawer co-founded Conscious Hospitality Group, developing restaurant concepts rooted in authenticity and community. The group’s portfolio also consists of the popular Just Poke, Sano and Matcha Magic.
