Sweetwater Tavern to Replace Marché With West Coast-Inspired Oyster Bar

The new seafood spot will offer West Coast oysters, wild local fish and Bainbridge-grown produce in a reimagined space opening later this year.

Following chef Greg Atkinson’s retirement and the closure of the beloved Marché restaurant, something new is on the way for the Bainbridge Island space.

The location is set to become Sweetwater Tavern, a locally focused seafood restaurant and oyster bar from chef and owner Pete Osborne, according to The Seattle Times. The tavern is expected to open later this year and will take inspiration from classic West Coast oyster bars.

Plans call for a new bar and additional indoor and outdoor seating. The design is described as a “Pacific Northwest ’70s Revival,” the outlet reported.

Sweetwater aims to highlight regional purveyors, including oysters from Hama Hama and Moonlight Oyster Co., and fish that is wild, local, seasonal and sustainable. Produce will be sourced from Bainbridge’s Butler Green Farms and Loki Farms.

Osborne comes from a family of restaurateurs. His father ran the Washington Square Bar and Grill in San Francisco before the family opened Momo’s, Pete’s Tavern and Pedro’s Cantina. Osborne attended culinary school at City College of San Francisco and worked at the family restaurants, San Francisco’s Waterbar and as a private chef.

An exact opening date has not yet been announced. Osborne has expressed excitement about continuing the legacy Atkinson left behind.
