A 1920s Prohibition vibe meets Irish charm at a new cafe and speakeasy opening this fall in Randle, Washington.
Brett and Mary Burrows, owners of the Irish Dream Motel at 10023 U.S. Highway 12, are transforming the property’s restaurant space into a unique venue.
“The name of it is The Celtic Spirits Speakeasy,” Mary told What Now Seattle. “It’s got two different dining areas. The front of it will be cafe style, but in the back you enter into a 1920s speakeasy with craft cocktails.”
The speakeasy will feature classic Irish fare, including staples like shepherd’s pie and bangers with mash, a traditional Irish and British dish of sausages and mashed potatoes often served with onion gravy. To highlight the Pacific Northwest, the menu will also offer seasonal fresh oysters, along with steaks, fish and salmon.
The cocktail program will center on signature drinks with Irish-inspired names, designed to be eye-catching—one topped with a smoke bubble and another changing color.
“My husband’s grandfather ran Moonshine back in New York, so we’re going with that theme,” Mary said. “There’ll be pictures on the walls of the Prohibition parties that were happening back during Prohibition, dim lighting and Celtic symbols.”
The Burrows said they are eager to bring a fresh concept to the community and connect with guests staying at the motel.
While an official opening date has not been set, The Celtic Spirits Speakeasy is expected to debut after Labor Day.
