The SOMM Hotel and Spa is set to open this fall, featuring curated amenities and elevated dining crafted by three-time James Beard Award semifinalist Chef Maximillian Petty.
The 164-room hotel in Woodinville will be managed by Seattle-based Columbia Hospitality and is designed to combine contemporary sophistication with exceptional comfort.
The SOMM will offer two wine blending rooms, the Vin de Spa with eight treatment rooms and yoga classes and more than 16,000 square feet of meeting and event space, including a grand ballroom and 5,000 square feet of outdoor space with a covered patio, according to a press release.
Chef Petty, celebrated for his innovative menus, will oversee two distinct dining concepts within the hotel.
Bin 47 will spotlight locally sourced, scratch-made dishes showcasing the flavors of the Washington region. The Shed, a farm-inspired rooftop bar and restaurant, will bring a rustic yet playful vibe, offering small plates crafted with hyper-local, roof-grown ingredients. Guests will also enjoy sweeping views of Mount Rainier and the Sammamish River Valley.
“This role is a rare opportunity to build something from the ground up, not just a menu, but an entire culture with the resources, support and team to bring it to life. I’m excited to create food that reflects who I am today, as well as celebrating a stellar team,” Petty said in a statement.
He continued, “At The SOMM we’re crafting an experience that’s elegant yet grounded, thoughtful yet inviting. I want guests to feel like they’ve arrived somewhere they didn’t even know they needed–where the wine tells a story, the ingredients shine and the hospitality feels like someone saved you the best seat at the table.”
Petty, a Woodinville native, is best known for his work at Eden Hill in Seattle’s Queen Anne neighborhood and Kinglet Restaurant in Walla Walla. In addition to his James Beard recognition, he was named by Eater as a “Young Gun” semifinalist and featured on Zagat’s 30 Under 30 list.
The SOMM Hotel and Spa will officially open its doors September 28.
