Xi’an Noodles Eyes Two New Seattle Locations

The spots are planned for the Chinatown-International District and University District.

Xi’an Noodles, a popular noodle restaurant, is planning to expand with two new locations.

Owner Lily Wu told The Seattle Met she’s negotiating leases for locations in the Chinatown-International District and University District. She described both spaces as “turnkey,” stating each could open in just two to three months once secured.

The news follows Xi’an Noodles’ other University District location recently announcing a temporary closure due to an “ongoing lease dispute over NNN operating expenses,” according to a Facebook post.

A triple net lease is a commercial agreement in which the tenant covers property taxes, insurance and maintenance on top of the base rent.

“We are actively working toward a resolution and truly appreciate your patience, understanding, and continued support during this time. Thank you for standing with us. We look forward to welcoming you back very soon,” the post read.

Founded in 2016, Xi’an Noodles is named after the capital of China’s Shaanxi province. Wu, a Chinese immigrant, spent two years mastering the craft of noodle-making before moving to Seattle.

The restaurant is known for its Biang Biang noodles and Biang Biang noodle soup, with spicy cumin lamb and spicy, tingly beef among the standouts. The menu also includes skewers of lamb, chicken, beef, fish tofu, grilled pork belly, quail or mackerel, plus potstickers and dumplings.

No official opening date for the new location or update on the former one has been announced, but customers can still enjoy noodles at the Bellevue and Westlake locations.
