Serving up homemade ice cream produced in its original New Port Richey location, Cotee River Creamery & Desserts has grown, since its founding several years ago, to include two brick-and-mortar locations and a permanently established food truck. Building on its increasing popularity, the scoop shop chain is preparing to launch another brick-and-mortar location, this time in Land O’ Lakes, at 6745 Land O’ Lakes Blvd.

And this time, Cotee River Creamery is expanding its menu offerings.

“What’s going to be unique about this location is we’re also going to offer coffee, lattes, and a more expanded menu in terms of desserts,” Shelley, an owner of Cotee River Creamery, told What Now on Thursday. “There will be some merchandising displays, and we’re hoping to develop not just ice cream and coffee, but possibly a light lunch component too.”

The new location will feature the brand’s signature look: greens, gold fixtures, and vertical lines, giving it a modern feel. There’s seating for about 8 guests inside, but there will also be a large outdoor patio for seating. It’s opening in an area where Cotee River Creamery has already made inroads, Shelley says, with its permanently established food truck at the That Place Down The Street food truck park.

“That Place Down The Street really should be praised for what they’ve done. It’s such a great kid-friendly, family-friendly location. They invested in the community early on, when they didn’t necessarily need to, and it’s very inspiring,” Shelley said. “And because of That Place Down The Street, we’ve already started growing a presence in Land O’ Lakes. We’re really excited to service that area.”

Cotee River Creamery & Desserts is working toward an opening in Land O’ Lakes by the end of this month.
