Indigo Road Hospitality Group Bringing O-Ku to Tampa in 2025

O-Ku will open in Bayshore Gardens, joining Maru, another Indigo Road concept

What Now reported last year on public records showing Maru, a new concept from Indigo Road Hospitality Group. After a year’s wait, a press release from Indigo Road announces Maru’s opening before the end of this year.

“Maru will be a new concept that celebrates the unique blending of Japanese and Peruvian flavors that create the popular Nikkei cuisine in a rooftop setting,” says the press release. “Maru will open in late 2024 atop the building with 60 inside seats, 30 outside seats, and stunning ocean views throughout. The rooftop destination will also offer small, composed dishes such as ceviches and handheld rolls alongside handcrafted cocktails inspired by the merging of the Japanese Peruvian cuisine, or choose from an expansive list of sparkling wines and champagne.”

But that’s not all! In addition to Maru, Indigo Road Hospitality is bringing its O-Ku Sushi concept to the same building, opening at street level.

With locations in cities like Atlanta, Charlotte, Nashville, and Jacksonville Beach, “celebrates authentic Asian cuisine with a regional approach through a menu that focuses on unique ingredients and sophisticated presentations. From temaki, nigiri and sashimi to hot plates and signature rolls, O-Ku’s chefs showcase the freshest fish from the world’s finest markets alongside local sustainable sources.

“We’re thrilled to be part of the exciting changes happening in the Tampa market,” Steve Palmer, Founder and Chief Vision Officer at Indigo Road Hospitality Group said in the press release. “Asana Partners has done an incredible job of reimagining Bayshore Gardens, and we’re honored to be a part of the project. We look forward to introducing O-Ku to a new community and to bringing another brand-new concept, Maru, to life.”
