Late Start Brewing Plans to Be Open in Time for Beer Week

The local brewer’s permanent Tampa home will feature elevated pub eats, coffee, and a wide variety of beers

Better late than never: Creative Loafing Tampa Bay reported that local brewer Late Start Brewing would open its first brick-and-mortar location at 1018 E Cass Street in Downtown Tampa back in March of 2022. After a long process of preparation, the brewery is finally preparing to open its doors early next year, co-owner Jordan Copher told What Now on Thursday.

The name of the game with this new location is variety, as Late Start Brewing will also be home to Late Start Coffee, a cafe opening onsite at 7 a.m. The brewer will transition each afternoon from cafe to taproom, offering a selection of elevated pub eats from Chef Nate Hardin, under the name Mighty Fine Eats.

“The concept is breakfast tacos, which will also be available for catering,” Copher said. “[Hardin] is also doing some elevated pub food: burgers, tater tots, things like that.”

The location, which is where Late Start will be brewing its eclectic selection of beers ranging from English ales to fruited sours to hazy IPAs, will feature seating for a little more than 60 guests inside and about as many outside.

“We’re hoping to be open before Beer Week,” said Copher.
