South Plaza, the retail center located on the northwest corner of Cortez Boulevard and South Broad Street in Brooksville, appears to be welcoming a new health-conscious restaurant into its food and drink community. Plan review paperwork submitted by Ruby Rays Healthy Cafe LLC shows a new restaurant by that name—Ruby Ray’s Healthy Cafe—opening at 1254 S Broad Street.

Specifics are not yet available on the brand’s menu offerings. What Now reached out on Wednesday to a representative of the restaurant, who confirmed news of the project but declined to comment immediately.

This leaves us guessing on the nature of Ruby Ray’s healthy offerings.

A new health food restaurant is a natural fit for the plaza, which already houses natural goods store Get Healthy Brooksville. South Plaza also houses restaurants like Breakfast Station, Evergreen Chinese Food Carry Out, and Red Mule Pub.
