Orlando-Born SoDough Square Bringing Detroit Style Pizza to St. Pete

It’s the pizza chain’s first location outside the Orlando market, and its fourth overall

SoDough Square Pizza, “A Detroit Style Pizza Experience” founded by Robert Blair, the creator of startup concepts like Gringos Locos and Tin & Taco, is currently operating at three locations in Orlando and Winter Park. Now, the Detroit-style pizza chain is bringing those iconic square pizzas to the Tampa Bay Market, with a new location planned for St. Petersburg.

This much we could already know from the SoDough Square website. The only question has been where exactly that St. Pete pizza shop is headed. Submitted plan review documents now place it at 6925 Fourth St N.

The original SoDo (South Downtown) SoDough Square in Orlando features pizzas like the Detroit Rob City (Detroit red sauce, pinched sausage, ezzo cup pepperoni, whipped ricotta, hot honey, fresh basil), the Woodward White (Alfredo sauce, brick cheese blend, red onion, diced tomato, pecorino Romano, fresh basil), and the P.B.J.—meaning “pineapple, bacon, jalapeno,” with Alfredo sauce, brick cheese blend, pecorino Romano, and green onion.

“We begin by baking your Detroit-style pizza in traditional blue steel pans, sourced directly from Michigan, which impart the distinctive characteristics of this unique style,” says the SoDough Square website. “Every component is crafted in-house, including our signature Stanislaus tomato sauce and proprietary brick cheese blend, specifically shredded for SoDough. The true highlight, however, is our high-hydration, authentic Detroit dough. While this pizza is celebrated for many qualities, its standout feature is the “frico” — the caramelized cheese crust that defines its style and flavor. We take great care to use only the finest, freshest, and most flavorful ingredients, ensuring an exceptional culinary experience. Bon Appétit!.”

What Now reached out to Robert Blair on Wednesday to ask about plans for the St. Petersburg opening. Blair was not immediately available for comment.
