Located on South Tamiami Trail between Blackburn Point Road and Habitat Boulevard in Osprey, the Shops at Casey Key will soon be home to a new ice cream shop. Called Rosy’s Ice Cream, it’s opening at 1270 S Tamiami Trail.

“The story started about five years ago,” Enid Bryant, who is opening Rosy’s Ice Cream together with her husband Michael Bryant, told What Now on Thursday. “We moved to Sarasota, and we just fell in love with this community. Rosy’s has really been our way of putting down deeper roots. We’re here to stay, and we want to create a place where families, neighbors, kids, everybody can come together to celebrate and connect.”

The menu will feature 32 ice cream in flavors, in constant rotation, with dairy- and/or sugar-free options for guests with dietary restrictions. Rosy’s will also offer custom ice cream cakes to take home for your own celebration.

“We think of it as more than an ice cream shop,” Bryant said. “When we came here, we felt so embraced and supported by the community, and that made us want to create a community hub. Somewhere people come together after a school play, Little League games, Sunday service.”

This attention to the community is right there in the name. Rosy’s is named in honor of the Roseate Moonbird—”A fascinating Florida, bird,” Bryant said, “so beautiful, and really social”—and in addition to working with local schools and churches, the Bryant’s hope to give back by raising awareness about and helping care for birds and the local ecosystem.

The interior design is a nod to the roseate spoonbill and to the overall feel of Florida’s west coast. Even if you’re a local, Bryant says, you’ll feel like you’re on vacation.

Keep your eyes peeled: Rosy’s Ice Cream is expected to open this September.
