Seasoned Restaurateurs Come Together for Pulpo, a ‘New American Latin’ Concept 

The restaurant, helmed by Jason Ruhe, as well as wife Hope Montgomery, brother Dylan Ruhe, and longtime friend Julian Colson, will draw inspiration from Chef Jason’s Cuban heritage, as well as Peruvian, Colombian, and Puerto Rican fare.

Seasoned chef and restaurateur Jason Ruhe – together with wife Hope Montgomery, brother Dylan Ruhe, and longtime friend Julian Colson – plan to open their newest concept, Pulpo, at 2147 Central Ave in St. Petersburg this spring.

Building on the success of Chef Jason’s previous endeavors, Brick & Mortar and Sea Worthy, Pulpo will be a “new American Latin” restaurant, with a diverse menu of tapas-style shared plates, seafood dishes, savory options, and desserts that draw inspiration not only from Jason Ruhe’s Cuban heritage but also Peruvian, Colombian, and Puerto Rican fare. 

Similarly, Pulpo will feature a robust cocktail program that compliments its design, which houses both a 35-seat center bar as well as an outside bar and patio. 

According to additional reporting from local media outlet St. Pete Rising, Pulpo’s interior design will be handled by David Fischer, the owner of local firm and retail shop Zazoo’d, who’s bringing a “contemporary and colorful look,” to the space.

Whereas Jason Ruhe and Montgomery solidified their names in Tampa’s culinary scene when they opened Brick & Mortar eight years ago, followed by Sea Worthy in early 2020, managing partner, Dylan Ruhe has an illustrious career all his own, with experience that spreads from San Diego to New York, as well as a decade spent in South Korea operating his own Mexican restaurant, Cantina.
