HMSHost Expanding Dining Options at Toronto Pearson International Airport

HMSHost, a global restaurateur and part of Avolta AG, is expanding its dining footprint at Toronto Pearson International Airport under a new 12-year contract covering more than 57,500 square feet across multiple terminals.

The company’s expanded partnership with Toronto Pearson will introduce new outposts of Mary Brown’s Chicken, OEB Kitchen + Bar, Libretto Slice Shop from Pizzeria Libretto, and KINTON RAMEN to Terminals 1 and 3, according to a press release. HMSHost will also debut Community by Roger Mooking, a new concept from Chef Roger Mooking, while continuing to operate Twist by Roger Mooking under a lease extension. Openings are scheduled to begin in early 2026, ahead of increased travel expected during the FIFA World Cup. Customers can expect a mix of full service dining and grab and go options featuring Canadian and international brands.

“This is an exciting evolution of a partnership between HMSHost and Toronto Pearson that began nearly 25 years ago,” Steve Johnson, President and CEO, North America, Avolta, said in a press release. “Over the years of collaboration, we have created a world-class traveler experience at Toronto Pearson — and now, together, we are raising the bar to usher in the future.”

The agreement marks a continuation of a nearly 25-year relationship between HMSHost and Toronto Pearson. The airport served nearly 47 million passengers in 2024, making it Canada’s busiest travel hub. The new contract will span more than 5,300 square meters of restaurant space across multiple terminals. In addition to new concepts, several long-standing venues will undergo renovations.

Upgrades are planned for existing locations, including Starbucks, Tim Horton’s, and Fionn MacCool’s. Enhancements will include refreshed menus and added technology, such as self-order kiosks and digital waitlists. Travelers will also continue to have access to the Club Avolta loyalty program, which offers rewards and promotions across participating locations.

The new restaurant lineup highlights a strong Canadian presence. Mary Brown’s Chicken, founded in Newfoundland, is known for its made-from-scratch fried chicken, while OEB Kitchen + Bar focuses on brunch items such as breakfast poutines and bowls. Libretto Slice Shop will offer Neapolitan-style pizza, and KINTON RAMEN brings its Japanese ramen concept to the airport setting.

Community by Roger Mooking will mark the chef’s second restaurant at Toronto Pearson. Mooking first partnered with HMSHost in 2015 to open Twist by Roger Mooking in Terminal 1, which has become one of the airport’s most popular dining destinations. The upcoming additions aim to broaden the airport’s food and beverage mix as passenger traffic continues to grow.

“Combined with our new restaurants and bars, these improvements will change the dining landscape as travelers know it,” said Johnson. “2026 will be a year that everyone will want to travel through Toronto Pearson, no matter their ultimate destination.”
