Jupiter Bakehouse, a community-focused artisan bakery specializing in sourdough and French pastries, is set to open in Toronto at 1505 Gerrard Street East.

The new bakehouse is moving into the former home of Glory Hole Doughnuts at the corner of Coxwell and Gerrard in Leslieville, according to Toronto Life. Owner Jackson Forster tells What Now Toronto that he hopes to have a soft opening at the end of October 2025. Guests can expect loaves of long-fermented sourdough bread, traditional tarts and cookies, and an emphasis on Canadian-grown grain.

Forster, who has spent nearly a decade working as a chef, began his career in fine-dining French restaurants before transitioning into baking. His interest in bread developed during his time as a pastry chef and grew into a deeper focus on sourdough while working at Petite Thuet and later at Blackbird Baking Co. under Simon Blackwell, whose starter is preserved in the Belgian Sourdough Library.

Before securing this location, Forster sold his baked goods at the Withrow Farmers’ Market for two seasons while spending over 18 months searching for a permanent home. The goal for Jupiter Bakehouse has always been to build a welcoming space that invites transparency and connection between customers and the baking process.

The menu will center around naturally leavened sourdough, French-style pastries, and a rotating selection of seasonal offerings. Coffee and espresso will also be available, rounding out the experience for daily customers and weekend market-goers alike.
