Melani to Replace Byblos Uptown in Toronto

Melani, a modern Greek restaurant offering contemporary coastal cuisine, is getting ready to make its debut in Toronto at 2537 Yonge Street.

The new concept will take over the former home of Byblos Uptown, which closed on October 20, 2025, after operating for seven years, according to BlogTO. Melani is set to open exactly one month later, on November 20, 2025. Owned by INK Entertainment Group, the new restaurant will maintain a Mediterranean feel but focus specifically on modern Greek dishes served in a contemporary coastal atmosphere. Guests can expect approachable, elevated dining with a focus on tradition and presentation.

Melani will feature a coastal-inspired interior and a menu that highlights modern Greek flavors, balancing classic dishes with contemporary touches. Marketing materials feature the slogan “From the coast of Greece to the heart of Uptown,” with social media showcasing oceanic imagery that complements the restaurant’s coastal aesthetic.

INK Entertainment Group has a track record of transforming restaurant concepts, including Clio into Honey Chinese, Margo into Primadonna, and Pink Sky into Vinny. The company operates several notable restaurants, such as Akira Back, Animl Steakhouse, Amal, and Byblos, alongside nightlife and entertainment ventures across North America. Melani reflects INK’s approach of refreshing its portfolio while staying aligned with Toronto’s evolving culinary and cultural trends.

Charles Khabouth, CEO and Founder of INK Entertainment, has shaped Toronto’s hospitality scene for more than four decades, while Co-Founder and President Danny Soberano has been instrumental in the company’s food and beverage ventures. Their leadership ensures that Melani aligns with the company’s standard of innovative, experience-driven dining.

The Uptown location positions Melani in a high-traffic area with strong residential and commercial activity.
