Poulet Rouge, a Quebec-based fast-casual restaurant specializing in customizable grilled chicken bowls, is preparing to open a new location in York at 90 Weston Road.
The upcoming restaurant will be located in the Stock Yards district, according to the company’s website. While an exact opening date has not yet been confirmed, the new site will further expand the brand’s presence in the Greater Toronto Area. Poulet Rouge is known for its build-your-own-bowl format and wide range of diet-friendly options. Customers can expect the same customizable menu that has helped fuel the company’s steady growth.
Founded in 2012, Poulet Rouge has built its reputation on grilled chicken bowls inspired by Mediterranean flavors and modern fast-casual dining. The brand allows customers to choose a base such as brown rice, crushed wheat, quinoa, or romaine lettuce, then layer on grilled chicken or vegetable fillets, toppings, and signature sauces. Popular chicken flavors include BBQ, Hercules, Lemon, Shisha with Garlic, Volcano, and Spicy. Vegetable fillets are available for the same price, offering flexibility for non-meat eaters.
Sauce options range from Caesar Ranch and Smoked Chipotle to Dijon Honey, Lime Coriander, Spicy Mayo, and Sweet Za’atar. The menu is designed to accommodate a variety of lifestyles, including halal, vegetarian, vegan, keto, and high-carb preferences. This approach has helped Poulet Rouge appeal to a broad customer base across Canada.
As previously reported by What Now Toronto, the company has been actively expanding in recent years, including opening its flagship street-front location on Queen West and announcing multiple new sites across Quebec. The York opening continues that momentum as Poulet Rouge adds another Toronto neighborhood to its growing footprint. The Stock Yards location places the brand in a mixed-use area with strong retail activity and daily foot traffic.
