Steven Tran tells What Now Toronto that the new chocolate shop is expected to open its doors by mid-September

Steven Tran Pâtissier Chocolatier, the long-anticipated pastry and chocolate boutique from master pastry chef Steven Tran, is set to open its first brick-and-mortar location at 476 Roncesvalles Avenue in Toronto.

Steven Tran tells What Now Toronto that the new chocolate shop is expected to open its doors by mid-September, with a soft launch possible earlier depending on final preparations. Tran is holding off on setting an exact date to allow for flexibility as construction and final touches are completed. The new pâtisserie will operate primarily as a takeout-focused concept with limited seating and a Japandi-style interior, blending Scandinavian minimalism with Japanese aesthetics.

The menu will feature chocolate bonbons, bars, petite gâteaux, French cakes, cookies, and buttery pastries such as financiers and madeleines. A small coffee and tea program will also be offered, and gift boxes are expected to be a key feature. Viennoiseries may be added in the future, though croissants won’t be available at launch.

Tran brings over 20 years of international experience to the new shop, having worked in Michelin-starred kitchens across France, Belgium, Tokyo, the UK, and New York, including under the guidance of chef Daniel Boulud. In Toronto, he previously held pastry chef positions at Café Boulud at the Four Seasons and the Shangri-La Hotel. He gained national attention after winning Spring Baking Championship Season 10 on the Food Network.

During the pandemic, Tran began operating under the Steven Tran Pâtissier Chocolatier name through pop-ups in Vancouver and Toronto. After years of refining his concept and waiting for the right space, the Roncesvalles storefront marks the next phase of his career and a long-held personal dream to open his own pâtisserie.

“IT’S FINALLY HAPPENING! It’s been almost a month since I received the keys to my new commercial space, and I’ve been waiting impatiently to announce it officially,” Steven Tran says on the concept’s social media. If you have been following my stories, you might have guessed already. I’m happy to announce that Steven Tran Pâtissier Chocolatier is finally coming to life after 20 years! I’ve lived in 5 different countries, learning my craft, and countless hours in the kitchens, and opening my own shop has always been my ultimate dream. I found my passion early on in life and have not looked back since. This career has brought me around the world and given me an outlet for my creativity. It saved me from the difficult realities of life sometimes, and it became a form of escapism in my younger years (I have since learned to balance my life more). So, I’m excited to bring you on my journey on this exciting new adventure because I don’t really know what I’m doing and scared shitless.”
