The Wilbur Taco Co., a sister concept of Wilber Mexicana, is getting ready to make its debut in Toronto’s Liberty Village at 50 Atlantic Avenue.

Wilbur Mexicana, a fast-casual taco restaurant in Toronto, was founded in 2015 by brothers Will and Baird Cumberland, along with Steve Chan. Located at 552 King West, the restaurant quickly became popular for its diverse menu, relaxed atmosphere, and quick service. Over the past decade, it has built a steady customer base despite changes in the area’s demographics and the impact of the COVID-19 pandemic. While several neighboring businesses closed during this period, Wilbur Mexicana remained consistent in the King West food scene.

Now that the company has made it through the pandemic and has remained a popular option within Toronto, the owners are getting ready to open a new location, dubbed The Wilbur Taco Co., according to BlogTo. It’s unclear when this new concept will open, but the restaurant’s name is displayed on the building’s rigid metal siding. Wilbur Mexicana is named after Wilbur Scoville, the chemist behind the Scoville heat scale. Its menu features Mexican street food staples such as tacos, burritos, quesadillas, and fajitas. Popular items include Baja Fish Tacos, Carne Asada Burritos, and Shrimp & Shrooms Quesadillas. A key feature of the restaurant is its extensive salsa and hot sauce bar.
