Toasts N Roasts will soon begin to knock down some walls and take over an adjacent salon space to add interior seating for diners in its Uptown spot. “We have no indoor seating, only patio,” Toasts N Roasts owner Angela Roderick said. “We’re going to go from 500 square feet up to 1800 square feet. Almost all of it will be seating.”

Currently, Toasts N Roasts offers specialty coffees, pastries, and gourmet toasts. With the seating expansion comes added benefits including extended hours, a bigger menu, and entertainment.

Current hours are 6:30 a.m.-3:00 p.m., but Roderick said they plan to extend hours until 6:00 in the evening once the remodel is complete and then possibly to 10:00 p.m. a few months later. Toasts N Roasts also plans to feature local artists and host events and shows.

“The general feel of the new expanded area will be more of a casual, more like a wine bar feel,” Roderick said. Toasts N Roasts already has a liquor license, but they plan to utilize it more once they have more space.

“We will have a rotating local beer on draft, local kombucha on draft, and all the spirits, as well.” Roderick is also planning to have champagne brunches, wine, and cheese and charcuterie boards in the evenings.

Roderick said the expansion will be a good thing for the restaurant. With no indoor seating, the COVID six-foot restriction decreased the amount of space available for those visiting Toasts N Roasts for a bite to eat or coffee to savor.

Toasts N Roasts mostly serves breakfast items such as burritos and of course, the staple—avocado toast. “During the expansion, we’ll keep our whole brunch menu, but we’ll be adding more appetizers, tapas. Charcuterie boards will be the main thing because we are not expanding our actual kitchen, so we are a little bit limited there,” Roderick told What Now Denver.

House-made desserts and breakfast pastries are already on the menu, but once the expansion is completed, they will add more pies and cakes. Toasts N Roasts has a full coffee bar, fruit smoothies, and workout shakes. Nitro cold brews will be added to the menu.

“We do have a lot of gluten free and vegan options, as well as keto, so we’ll be pushing that a little bit more, so everybody can come and eat with their friends no matter what their restrictions are,” Roderick shared.

“We’re simple, but we try to do everything we do really well, so that’s what we’re going to continue.” They hope to have the expansion completed by May of 2022 to celebrate Toasts N Roasts three-year anniversary. Toasts N Roasts first opened in Uptown in May of 2019.
