The Palazzo at the Venetian is gearing up to welcome Wakuda into its fine dining community. The Sydney-born restaurant will make its US debut there on June 25.
According to coverage in Forbes, superstar chef Tetsuya Wakuda chose Las Vegas for his first US restaurant over many other American cities. “Las Vegas attracts not only international travelers, but also the world’s best chefs,” he said. “It has developed into a phenomenal food city and I am so pleased to open a restaurant among such fantastic company. My partner John Kunkel of 50 Eggs already has an established presence in Las Vegas through his partnership with The Venetian Resort. Presenting Wakuda in such a dynamic city is an exciting prospect.”
Sourcing ingredients from Australia, New Zealand, Japan, and Europe, the Las Vegas menu will feature dishes like Marinated Botan Shrimp with Sea Urchin and Caviar and roasted Spanish Carabinero prawns with shellfish and miso risotto. It combines traditional and contemporary Japanese cuisine, blending Japanese and French technique for unforgettable seafood-centric dishes.
Other dishes featured at Wakuda in Sydney have included New Zealands Snapper Sashimi, Pickled Fennel, Radish and Cucumber; Sand Whiting with Oyster Herb Emulsion, Watermelon Radish and Daikon; and Full Blooded Wagyu with Sesame Leaf, Shiso and Salted Plum, White Kombu.
