An exciting new seafood restaurant and raw bar is currently getting ready to debut in the Lower East Side later this year.
Chin Up is a brand new bar and restaurant concept from owners Brian Grummert, Blake Walker, and Henry Alvarez. Brian Grummert is best known as the owner of Subject, a wildly popular cocktail bar in the lower east side. Located at 188 Suffolk Street, Subject was designed to evoke a cozy, beautiful aesthetic, inviting guests to enjoy premium cocktails in a space that’s reminiscent of their own homes. Focusing on big and expressive cocktails, Subject is well known amongst fans for its extensive spirit and natural wine selection.
Now, Brian and his team are getting ready to open up their latest restaurant in a brand new space at 171 Chrystie Street. The space is located in a new development and formerly housed a gallery. The location offers enough space to seat about 58 guests inside, with an additional 11 seat bar in the back. Additionally, the space also boasts its own backyard patio, which will allow Brian and his team to accommodate even more guests.
Chin Up is envisioned as an upscale seafood restaurant and cocktail lounge. A sample draft of their cocktail menu lists an impressive selection of martinis and gin drinks, with an additional selection of wine, beer, and cider. Chin Up will not offer beers on draft though, and will feature between 12-15 wines available by the bottle.
For the food, Chin Up will offer light bites to start like olives, popcorn, and pickles, as well as a robust selection of oysters, caviar, fluke, ham, and pork belly chicharrons. Chin Up will also offer large plates of fish, with the sample menu listing Spanish mackerel with smoked bacon and poached pear as a potential entrée, alongside additional vegetarian options.
With such a robust beverage program planned for Chin Up, Brian and his team must now meet with the community board to acquire a full liquor license for the space before moving forward with the project. The team is currently proposing operating hours of 12:00 PM – 2:00 AM Sunday through Thursday, and 12:00 PM – 3:00 AM on Friday and Saturday, with the outdoor patio scheduled to close at Midnight every night.
