Hyde Midtown will soon be home to French bakery and café brand Marie Blachère. The location, opening in retail unit B at 3401 NE First Ave., will be the brand’s first U.S. bakery outside New York.
What Now confirmed the news in a Monday morning phone call with Serena Natali, a local professional with some years of bakery experience who is heading up Miami’s Blachère project. Natali said the Miami location will differ significantly from NYC’s Marie Blachère, which offers baked goods prepped in the morning and sold in retail style. Marie Blachère Miami will offer a made-to-order menu.
The food will be made in a New-York-minute, Natali said—“Or, rather, a Miami minute.”
Natali has worked with bakeries for some time but came to work for Marie Blachère in large part, she said, because of its eponymous founder’s high level of transparency and waste-consciousness.
“In order to reduce waste, he [M. Blachère] is implementing tons of discounts within the bakery,” Natali said.
These include a massive markdown (50%) in the last thirty minutes of the day to clear out unsold items. Yesterday’s items can also be bought at a discount the next day. Natali compares this practice favorably with many other bakeries, which are reluctant to offer such discounts for fear of taking away from its full-price-paying clientele, and which may well sell you yesterday’s muffin, at full price, without telling you it’s yesterday muffin.
No opening date has been set for Miami’s Marie Blachère Bakery, but a cold opening is planned soon, with many free giveaways to be expected.
“As a bakery, we need to taste test the ovens,” Natali said. “And we’re not going to throw that away, we’re going to give it away.”
