With the first Zell’s Mountain Creperie just weeks away from opening its doors in Highlands Ranch, a second location is already in the works. Founder and CEO James Beatty recently signed a lease in Centennial and will be able to move into the space, currently a Starbucks, this August. He hopes to open the second Zell’s Mountain Creperie at 7521 S. University in Centennial sometime before the end of 2022.
“Location number two, the one on University, I couldn’t pick a better location,” Beatty told What Now Denver. He initially planned to have the Highlands Ranch location open for several months before signing a lease for a second location.
“Looking at my target market of high school students as our base, I just couldn’t turn down the location across from Arapahoe High School,” Beatty said. “One or our core values is education, so we do plan on working together with the local schools and other organizations.”
The first Zell’s Mountain Creperie will be located near ThunderRidge High School at 2229 W. Wildcat Reserve Pkwy., Unit A4, Highlands Ranch, CO 80129. One missing exhaust fan because of supply chain issues stalled the final approval, but Beatty hopes to open the doors to the Highlands Ranch location in the next few weeks.
The menu will feature crepes and paninis. “Our new concept is going to be, ‘You can crepe it, panini it, or garden it.’ So, a lot of the toppings and things we have will go well either in a salad, crepe, or panini.”
Diners can build their own, but some best sellers are expected to be the Nutella and banana crepe topped with strawberries. “It’s delicious.” The chicken pesto and pizza versions are also expected to sell well.
