A family-owned chicken sandwich restaurant will debut soon in North Park. Mom’s Chicken & Waffles will take over kitchen operations at U-31 Bar, with a mix of family recipes and new takes on classic sandwiches to complement the bars’ regular live music and watch parties for sporting events.
Former Rhythm’s Chicken and Waffles co-owner Brian Foxworth tells What Now San Diego that his restaurant in Pacific Beach closed earlier this year but he pivoted to support his parents in their next business venture. Mom’s owners Collette and Brian Foxworth Sr. will introduce the new concept with Foxworth Jr. in a supporting role.
Mom’s will serve its specialty chicken and waffle sandwich, featuring juicy fried chicken served between a crisp Belgian waffle, topped with bacon, cheese, and a fried egg. The kitchen will serve a variety of classic chicken sandwiches along with shareable plates like chicken and waffle bites.
