NY Pizza Chain to Debut at New Cap Hill Hotel

Brooklyn-born pizza shop Roberta’s, described by NY Mag as “an extremely Brooklyn pizzeria with a bread bakery and a cult following”, will have a Denver outpost soon The chain will open a location within the new Urban Cowboy hotel, planned for 1665 Grant St.

Recent Craigslist postings show the company is hiring for an executive sous chef position for its coming Denver spot. It’s a converted Capitol Hill mansion that is being turned into an 18-room Western-themed boutique hotel. 

Roberta’s started in Bushwick and has since expanded to Manhattan, Montauk, Culver City, Studio City, Nashville, and Singapore. The place is known for its hipster atmosphere and wood-fired pizza made with fresh ingredients. 

With pizza, pasta, salad, and dessert, Roberta’s has all the classic Italian fare. The brand specializes in thin crust, Neapolitan-style pies made of natural dough with no artificial yeast.
