Chef from Restauranteur Family Starting New Company

The Ionikh family has been a longtime staple in the Colorado cuisine scene, and continues to make a mark today. Maxsim Ionikh, an esteemed local chef, is starting a new concept called Whit’s End at 1736 East 31st Ave., records show. 

Maxsim’s parents owned Little Russian Café for many years. Next, the family turned their attention to an upscale Boulder concept called Amuse, which served European plates with an American twist in an ambient dining space.

Most recently, Maxsim has worked as the chef at Red Square Euro Bistro in Larimer Square. The restaurant has Russian and French roots within its menu, and is known for its extensive selection of over 100 infused vodkas. 

There is not much information available online regarding what Whit’s End will offer or be like. The company was established as an LLC in January, records reveal, and a liquor license was approved in mid-October.
