According to Denver Business Journal, Blackbelly Market will be adding a new location in Denver. The butchery and restaurant is taking over the property at 4324 W 41st Ave. in Berkeley.

The concept is the product of “Top Chef” winner Hosea Rosenberg, and was first started in 2014. It began as a catering business, and has turned into a local favorite that appears annually in 5280 Magazine’s Top 25 Restaurants and was awarded a Green Star for Sustainable Gastronomy by the Michelin Guide last year.

This new Blackbelly Market is occupying the shell left by Il Porcellino Salumi, which closes at the end of this month. Rosenberg will be acquiring that business’ employees.

The concept is a whole animal, artisanal butcher shop and market that sells its own cured and fermented meats, charcuterie, provisions, salami, charcuterie, rotisserie chicken, and more. Blackbelly Market serves breakfast and lunch and offers catering for large or specialty orders.
