Starbucks Transforming East Colfax Location

The Starbucks located at 2975 E Colfax Ave. is set to undergo a major makeover, city records confirm. The coffee giant is seeking approval for renovations at the location, which is on the border of Congress Park and Uptown neighborhoods.

Plans for the remodeling project, filed with the City and County of Denver, indicate the permitting process is underway. A structural plan was approved on January 24, but the architectural and electrical plans were not. 

This location, at the intersection of Colfax & Milwaukee, is a popular and well-trafficked store, just blocks away from East High School and just over a mile from Downtown Denver. It is open from 5 AM to 6:30 PM on weekdays and 7:30 PM on weekends. 

The remodel signals Starbucks’ commitment to its Triple Shot Reinvention Strategy, which it announced last year. The company’s focus on global growth and enhanced customer experience have led to it renovating over 1,000 stores.
