Coming early this summer to Golden, Pancho & Jane is sure to be the next trendy spot for tacos in town. The emerging concept, from The Eddy Taproom & Hotel team, was announced in a recent press release, building up hype for the eatery to open at 16500 S Golden Rd.

Pancho & Jane is described as a place for “Mexican favorites with a rebellious twist, plus bourbon, tequila cocktails, and more — with an outlaw spirit”. Both in its design and flavor profiles, the venue is set to be a bold new addition to the city.

The restaurant will have a from-scratch, seasonal menu curated by Director of Food and Beverage Ben Shapiro. There will be indoor and outdoor seating and a dog-friendly patio, as well as a to-go window for carry-out service.

Named after a Mexican revolutionary and a famous outlaw from the 1800s, the business’s radical design will have a colorful aesthetic, Western decor, exterior mural, and a large 30-seat bar. The interiors are being finalized and hiring is underway, a spokesperson told What Now Denver.
