Pasque Restaurant Debuting at Populus Hotel

As the highly anticipated Populus Hotel opens its doors this summer at 240 14th Street, its onsite restaurant will welcome patrons for the first time as well. Pasque is the name of the ground-floor eatery concept at the property, recent reports state.

The new dining destination takes its name from the vibrant Colorado pasque wildflower, reflecting its connection to local nature. Populus is designed to look like an aspen tree from the outside and will be the country’s first carbon-positive hotel. 

Pasque’s kitchen will be under the leadership of Executive Chef Ian Wortham, formerly of the acclaimed Frasca Food and Wine and Tavernetta. It will serve a seasonally driven menu that celebrates the rich flavors of Colorado and the Mountain West: an array of fresh plant-based ingredients, complemented by regionally sourced proteins from both land and sea. 

The restaurant’s interior design draws inspiration from the forest floor, creating a warm and inviting ambiance with organic shapes, cozy textures, and soft, layered lighting. This approach aims to bring the beauty and serenity of nature indoors, providing guests with a tranquil dining experience.
