Rebel Bread Introduces New Concept Gino Panino

Gino Panino is the name of a new Italian sandwich venture from Rebel Bread, according to a recent Denver Post article. The offshoot concept is currently operating at the bakery’s retail counter, but there are plans for a possible expansion. 

Founder Zach Martinucci explains that Gino Panino offers a fresh take on Italian focaccia-style sandwiches using local ingredients, allowing customers to grab and go with a taste of Italy right here in Denver.

Martinucci is eyeing a larger retail space to move both concepts to in 2025. This expanded venue will feature both Gino Panino’s signature sandwiches made with Rebel Bread’s focaccia-style bread and additional offerings, including pastries, coffee, and more from Rebel Bread’s menu.

“The team had a lot of fun playing with different ingredients and flavor combinations — not just for each individual sandwich, but for how the whole menu fits together,” he told What Now Denver. “There are savory sandwiches and sandwiches that lean sweeter, there are crunchy things and creamy things, and hopefully something for everyone.”
