The PZA Finds a Permanent Home 

It will open in the Santa Fe Art District.

Business licenses filed with the city show that The PZA has found a permanent location to call home. The eatery, which operated for a while as a pop-up, will be opening soon at 644 N Santa Fe Dr in the vibrant Art District.

Chef Jake Rothey is ready to bring his venture to the area, he tells What Now Denver. He started The PZA in May of 2022 by renting a kitchen from the Tight End bar on Colfax. After several successful pop-ups, he found the independent space, for which a five-year lease started on January 1. 

The business’s hand-tossed pizzas are a blend of NY and Neapolitan styles, with a sourdough crust that is fermented for 4-6 days. They use Polidori and Carmine Leonardo meats, fresh pineapple, house-pickled jalapeños, and scratch-made sauces. A menu for the new location is still being finalized, and Rothey says he’ll be adding sandwiches and more specialty pies.

This new location will offer a fast-casual, counter-service experience, complete with takeout and delivery options through the pizzeria’s website. He is considering applying for a beer and wine license in the future, he said. Health, building, fire, and zoning inspections were all completed in December, and Rothey is now waiting on a retail food license.
