According to a recent permit filing, High Noon will soon open in Goose Hollow at 1795 SW Salmon Street.
“Presently, we are pushing for late March / early April. High Noon is a fairly large space, with over 4,100 square feet to work with, housing several additional concepts, including a mercantile for to-go lunches, etc., to be opened following the completion of the restaurant side. It’s going to be fun, and we are excited,” Jessica Grimmer told What Now Portland.
“The proximity involved in our Downtown PDX area allows us to serve a vibrant community in Goose Hollow and downtown. We’re building a curated program, including events-focused experiential dining, featuring arts, entertainment, and charities. We also want to set ourselves apart in unique ways by offering concierge services, membership programs, and VIP experiences we’ve been developing over the past couple of years, distinctive to our elevated dining and cocktails in the mezzanine.”
“Portland’s beautiful soccer stadium, Providence Park, is directly across the street, and we’re very excited about their upcoming Summer Concert series, beginning with Foo Fighters in August, prominently opening our restaurant to the stadium concert crowd.”
“I’ve had 30 years of experience as a chef, significant training in craft cocktails, as well as creating the interior design, and experiential development of the programs. I also have some amazing partners, Aaron Grimmer who is a tech and networking genius, and Jaret Ferratusco, from media director to general management, who keeps the experience on point for the customer. But one thing about him… Jaret drinks hot soda. That part’s not on the menu, and won’t be.”
“The idea around High Noon is “Southwest by Northwest”. I grew up in the High Desert, and Aaron grew up in Alaska and Washington. We’ve raised two amazing children here and have a deep love for the history and culture of the West Coast; it’s complicated and has influences from all over the world. We want to honor the ingredients and also take care in creating an environmentally responsible program.”
