Pollo Regio, the growing Mexican fast casual brand, will soon begin building out a new location in Austin, according to recent public records. The restaurant will be located at 8620 Burnet Road, replacing a former Taco Cabana.
“Pollo Regio originated in Monterrey, Mexico and brought its authentic recipe for Mesquite-grilled chicken to Texas in the early 2000s,” the official website narrates. “Pollo Regio was founded by Mr. Bazaldua. He set up a food trailer that was outfitted with a charcoal grill, over which he cooked his special-recipe marinated chicken…It quickly became a successful concept and soon Pollo Regio moved into a regular storefront.”
Apart from the grilled chicken that has earned Pollo Regio its name, readers can also expect a variety of Mexican classics such as flautas, tostadas, quesadillas, nachos, and tortas.
The $300,000 project is estimated to begin in November and finish in May 2024. Until the Burnet Road store finally opens, eager readers can find outposts on Berkman Drive in Austin and in Waco, Houston, and the DFW metropolitan area.
